The Assam varietal is being used to create a delicate green tea in the hills near Doi Wawee in Thailand Northen Province. 

Grown by a small family operation, the process uses similar techniques with Japanese green tea production, by using undercover and shade to allow the tea to develop more flavor. 

Our Assam green tea is small leaf, tippy and rolled. Its taste is savory, grassy and vegetal. It is a very enjoyable tea for the mornings and afternoons, by itself or to pair with fishy foods at lunch.
